My Favourite Quick & Easy High Protein Vegan Meal

When you’re running short on time, it can be quite tricky to come up with a quick and easy meal that is high in protein and also tastes delicious - and after many trials and errors, I have found my favourite dish - the classic tofu scramble.

All I used for the spices were black salt, curry powder and turmeric - and it tastes AMAZING. What I truly love about this dish is that you can add as many vegetables to this dish and it just tastes better - it’s almost like a hack for me to get in more vegetables in my day.

I don’t drain my tofu, I do not see the point in it because since I don’t use any oil, the water in the tofu keeps it from sticking to the pan, and when it’s finally dry enough and cooked thoroughly - that’s when it’s ready. Before you try this recipe out - remember the black salt is the heart of this recipe, and changes everything. I wasn’t always a fan of tofu scramble until I discovered how much of a difference black salt makes.
